There is a particular kind of relief that comes from realizing the turkey does not have to be the most stressful part of Thanksgiving Day. With this make-ahead method, the roasting, carving, and biggest cleanup job all happen the day before, leaving you with a beautifully cooked bird and a much calmer kitchen when guests arrive.

The sliced turkey is gently reheated with stock and gravy, which keeps the meat moist and brings back that just-roasted richness without another long stretch in the oven.

You still get tender turkey, savory pan flavor, and a platter worthy of the holiday table, but with far more room for stuffing, casseroles, rolls, and pie. It is a practical little bit of planning that makes Thanksgiving feel noticeably easier.

  • lb Whole Turkey, thawed, giblets removed
  • cup Unsalted Butter, softened
  • Garlic Cloves, minced
  • tbsp Fresh Rosemary, chopped
  • tbsp Fresh Thyme, chopped
  • tbsp Kosher Salt
  • tbsp Black Pepper, freshly ground
  • cup Low-Sodium Chicken Broth, divided

Make ahead

Designed to be fully roasted and carved 1 day ahead, then reheated the day of serving.

Instructions (Tap as you go)

  1. The day before serving: preheat oven to 325°F. Pat the turkey dry and rub all over and under the skin with softened butter mixed with garlic, rosemary, thyme, salt, and pepper.

  2. Place on a rack in a roasting pan with 2 cups chicken broth in the bottom. Roast 2.5–3.5 hours until a thermometer reads 165°F in the thigh. Reserve all pan drippings for gravy.

  3. Let the turkey rest 20 minutes, then carve into breast slices, thighs, drumsticks, and wings.

  4. Arrange the carved turkey in a large baking dish, cover, and refrigerate overnight along with the reserved drippings.

  5. On serving day, preheat oven to 325°F. Pour the remaining 2 cups chicken broth (or prepared gravy) over the turkey, cover tightly with foil, and reheat for 30–40 minutes until warmed through (165°F internal).

  6. Uncover for the last 5 minutes if you'd like the skin to re-crisp slightly.

Tips

Carving before refrigerating (rather than storing the whole bird) means the meat reheats evenly without drying out. Keep the reheating liquid generous — the meat is more exposed to air once carved and dries out faster than a whole roasted bird.
