How to use one oven for an entire meal

Work backward from serve time

Start with when you want everything on the table, then count backward. The longest-cooking dish goes in first. Dishes that need the most rest time (large roasts, turkeys) actually come out of the oven before everything else — which frees the oven for last-minute items like rolls or gratins.

Most dishes tolerate a 25-degree swing

If one dish calls for 350°F and another for 375°F, you can cook both at 365°F — just add a few minutes to the lower-temp dish. This flexibility is the key to fitting multiple dishes into one oven. The exception is delicate baking (soufflés, custards, meringues) where precision matters.

Rest time is your secret weapon

A roast turkey needs 30 to 45 minutes of rest before carving, and it stays hot the entire time. That's 45 minutes of oven-free time to bake your casseroles, roast your vegetables, and warm your rolls. Rest time isn't downtime — it's your window to use the oven for everything else.

Preheat strategically

If your first dish cooks at 325°F and the next needs 425°F, plan 10 to 15 minutes between them for the oven to come up to temperature. Going from high to low is instant — just open the door for a minute. Going low to high takes real time and should be factored into your schedule.
